Simple Meal - Pesto Pasta

Hi guys, so I thought I would post something a little different today. I am getting into cooking a lot more now and thought it would be great to blog about some of the different dishes I am learning as I go along! Today I made a quick lunch which is one of my absolute favourite things, Pesto Pasta! It is so simple, all you need:

  • Pasta
  • Basil
  • Garlic
  • Pine Nuts
  • Olive Oil
  • An optional cheese and vegetables of your choice.#




Firstly, you place a hand-full of basil leafs, pine-nuts and 1 crushed garlic clove into a blender until it is all blended together as one. Then I poured enough olive oil to make a creamy consistency that can be mixed easily, and sprinkled some pepper. I then placed the pesto in the refridgerator to cool whilst I cooked the pasta.
I simply let my pasta simmer in the pan of boiling water for around 15 minutes, stirring in a tbsp of salt and a sprinkle of pepper half way through.
I cut small pieces of feta cheese to sprinkle on top of the pasta, along with slicing some green pepper and some fresh rocket (my alternative to spinach).
Once the pasta was cooked I simply drained all the water and stirred in my now-cooled pesto, adding some extra pepper and a drizzle more of olive-oil. I sprinkled the cheese on top and placed the rocket and peppers to the side of the plate. This took no longer than 20 minutes to make, it's so tasty and couldn't be simpler. Instead of making your own pesto you could always buy pre-made from a
supermarket, to make it even simpler.

  1. Obi love pesto pasta! And yes it is so so easy to make. I love sprinkling feta on everything I make too, so yum! I love Making pasta lasagnue, you should give it a go, it isn't as hard as you may think :)
